Le Rapala
The Rapala, a cocktail to enjoy with crêpes.
The Rapala, which is also a fishing lure, is the cocktail that Quebecers drink when they go ice fishing in cabins on frozen rivers. This cocktail is also perfect for celebrating Candlemas with crêpes.
Ingredients:
- 1 liter of apple juice
 - 2 cinnamon sticks
 - The juice of one lemon
 - 3 tablespoons of maple syrup. If you can't find maple syrup, you can replace it with honey, although the taste will be slightly different.
 - 20 cl of whiskey (optional if you want to make a Rapala for children).
 - Whipped cream and caramelized nut chips for garnish.
 
In a saucepan, pour the apple juice, lemon juice, maple syrup, and cinnamon. Simmer for 10 minutes. Remove from heat and add whiskey (optional for an alcohol-free Rapala). Serve in mugs. Garnish with whipped cream and nut chips. With crêpes or pancakes with maple syrup, TABOUERE! It's happiness!
